For me one of the hardest parts of a heart-healthy diet is giving up excess sodium. I have read about substituting Mrs. Dash for salt in my cooking but the results weren't that satisfying. Here's an easy recipe that won't wreck your good intentions.
Aluminum Foil Chicken
For each serving:
1 boneless, skinless chicken breast
1 spritz cooking spray
1 dusting onion powder
1 dusting garlic powder
1 dusting paprika
1 dusting cayenne pepper
1 dusting fresh-ground black pepper
On a generous sheet of aluminum foil spray both sides of the chicken breast, then dust it with the remaining ingredients. Enclose into a sealed pouch and bake about 45 minutes* at 350° F. I use a convection oven set at 300°.
*For convenience I start with a frozen chicken breast and bake it for 1 hour. Either way, check for an internal temperature of at least 165° F.
